2020 Cabernet Franc "Pétillant Naturel", Red Willow
This sparkling wine made with Cabernet Franc grapes from the same vineyard as our Red Willow "Blanc Franc" wine. It's made using an ancient process called Méthode Ancestral, where grapes are whole-cluster pressed after a brief skin-contact, and bottled just before primary fermentation is finished. Fermentation finishes in bottle, producing natural CO2.
**NOTE: Unlike our Côt Pet-Nat, this wine was not disgorged and it contains all the yeast that finished the fermentation, just like original Pet-Nats were intended to be. We think that this is the best way to enjoy a Pet-Nat, when possible. You'll want to make sure it is well-chilled before serving and that you have a couple glasses ready to pour into when you open the bottle.**
